So What! Wednesday

Happy Wednesday! Due to my head being in a geography book for the last two days I decided to make today's post simple. Since I havent in awhile, I'm linking up for




This week I'm saying SO WHAT if...

  • I was actually really bothered that the Style Network got taken away. And the fact that I spent a half hour searching for the episode of Giuliana and Bill I thought I missed last week just to find out it took a 3 week break
  • Bailey has gained 3 pounds. I swear this dog has a tape worm. Although I'm not too happy about it, we also don't take him for walks. Surprisingly he's actually not a huge walker and when we do walk, he has to sniff every time so a good walk never happens
  • I secretly wish that Brian would go spend the nights that the Bruins are on with his family. Hockey starts tomorrow night and Brian already called the TV. I honestly treasure the times where he's working. 

  •      I haven't told my teacher what I want to do for a research topic. This whole Class, Status and Power classes isn't up my alley and I have absolutely no interest in it. Although I love education and learning, when you have no background knowledge on these topics, it's hard to follow along and know what your writing.
  •      I bought a cookie two days in a room at school. I promised myself that starting October 1st I'd eat way more fruits and veggies. I get inspiration in eating really good during the fall months. I then convince myself that if I do it then I can do it anytime of year. But those cookies...warm and oh so good. Plus they were only a dollar
  • I gave the girls that sit behind me in class a mean look yesterday. They seem to think it's crutal to talk about the color of their nails during class. It's hard enough to hear our teacher because he's like 75 years old and doesnt talk loud
  • We are selling the wave runner. This is something that I kind of dont want to do but we barely used it this summer due to my dad hurting his back. 
  • I decided to fully give up on drying my hair. My hair is thick and always gives me problems. At the beginning of the summer when I went to get my hair done, my hairstylist said that it's actually alot better for your hair if you dont dry it. Drying it only makes it look better.
  • I'm kind of jealous of all my pregnant blog friends. It's so great that beautiful babies have and will be coming into this world but seriously. They are my favorite and I kind of wish I had one :)
  • I havent wrote any scheduling posts for the week. I've been so busy that I've kind of thrown together the ones this week in a short period of time. But it's ok. I needed to feel un-rushed due to all the school work

Taste of Tuesday - Autumn Pork Roast

One of my favorite things about Fall is the food! As I've mentioned we live very close to farms. Which means when these few months come around we go and splurge on fresh veggies and fruit. I really only like certain veggies though, maybe only 3 kinds. So when my mom put this meal in front of me years ago, I wasnt sold at first. But...then I tried it and I can honestly say it's my favorite meal. We only eat it during the Fall so it's something I always look forward to. 






Ingredients
  • 1 bone-in pork loin roast (5 pounds)
  • 8 medium potatoes, peeled and quartered
  • 8 carrots, halved lengthwise
  • 2 medium onions, quartered
  • 1 small pumpkin or butternut squash, peeled and cut into 1-1/2-inch chunks
  • 1 cup water
  • 3 tablespoons snipped fresh sage or 1 tablespoon rubbed sage
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 4 baking Apples, quartered

Directions
  1. Place the roast in a large baking pan. Arrange potatoes, carrots, onions and pumpkin around roast.
  2. Add water to the pan. Sprinkle meat and vegetables with sage and pepper; dot vegetables with butter (if you have a stick of butter cut it to 2 tbsp and then cut little slices and place around the pan evenly) 
  3. Bake, uncovered, at 400° for 15 minutes. Reduce heat to 350°; bake, uncovered, for 1 hour
  4. Place the apples around roast; cover and bake for 1-1/4 hours, basting every 30 minutes, or until a meat thermometer reads 160°-170°
  5. Enjoy!

Weekend Update - marching bands, junk food and the beach

Happy Monday all!! Is anyone else thinking it's crazy that tomorrow is already October? I remember back in elementary school that when the first week of October hit, we started our countdown to the holidays. We'd make the chains of construction paper for Christmas. My favorite time of year and I'm oh so ready! In the meantime, we had a very nice weekend. On Saturday my parents and I took a drive up to Maine, about two hours away. I have twin cousins, boy and girl, and they both are very involved in activities  The girl is apart of marching band for her high school. They do shows, go on trips, you name it and they do it. It's so nice to see her enjoy something this much! There was a performance Saturday night. 8 bands from 8 high schools, including hers. They were getting judged and would get recognition at the end of the night. I'm not really into watching school bands or anything but I have to say it was really neat and I really enjoyed it! Downsides were: sitting on the bleachers for over two hours, it was freezing and we had to get food from the concession stands. Cold hot dogs and not cooked burgers. That part wasnt exactly fun. 

We got to Maine about noon. Had lunch at my aunts and then drove down to the area where the performance was. It was right near the beach so my parents, aunt and I took an hour or so and walked around. The board walk was closed except for a store or two but it was still fun to walk around. They also have amusement rides that line the beach. We left around 8:30, and stopped for some burger king (can you say crappy food overload? I'm eating fruits for a week!).

2) Never realized they take the seats off the Ferris wheel during fall/winter.

2 and 3) Haven't been to the board walk in years. Course, it'd be so cool to go to one of the places that has the big board walks with food and rides. Where do they have those?
4) I'm sad it looks like this. It was taken from my iphone so it's actually a height-wise picture but I distorted it for this reason. 



1) The best fish chowda! 
2) Cake batter rise krispie treats with sprinkles mixed in and on top. Sweet but so tasty. I might even share the recipe!
3) Cant pass up the candy store on the board walk!

3) On our way home. You couldnt see anything for a good few minutes.
