Taste of Tuesday - Zucchini Relish

How many of you have gardens? What kinds of veggies do you have? I've been chatting with a few bloggers recently and they have all said that they have alot of zucchini but dont know what to do with them. Zucchini bread? That's too easy though! This whole zucchini overload came at a perfect time! The recipe below is a family favorite. My mom and grandmother have made this recipe for as long as I can remember. I know I keep saying the last part of that sentence, but tradition is good :) 


*Side Note - I got this picture online. We will be finishing the recipe today. Also, this picture has multiple colors so I'm assuming they used a few different colored peppers. We only used green this time





Ingredients:
  • 20 chopped zucchini (hand chopped)
  • 8 cups chopped onion (hand chopped)
  • 4 sweet green peppers
  • 1/3 cup canning salt
  • 2 tablespoons cornstarch
  • 8 cups sugar
  • 5 cups cider vinegar
  • 4 tsp turmeric
  • 4 tsp celery seed

Directions:
  1. Mix zucchini, onion, pepper and salt. Let stand overnight
  2. Drain then rinse and drain again
  3. Add remaining ingredients
  4. Bring to a boil. Simmer 30 minutes
  5. Pour into hot sterilized jars (we are sterilizing jars in the diswasher) and seal tight
  6. Put jars into water and process for 5 minutes
  7. You have to wait about 6 weeks before eating/opening
