
*Side Note - I got this picture online. We will be finishing the recipe today. Also, this picture has multiple colors so I'm assuming they used a few different colored peppers. We only used green this time


Ingredients:
- 20 chopped zucchini (hand chopped)
- 8 cups chopped onion (hand chopped)
- 4 sweet green peppers
- 1/3 cup canning salt
- 2 tablespoons cornstarch
- 8 cups sugar
- 5 cups cider vinegar
- 4 tsp turmeric
- 4 tsp celery seed
Directions:
- Mix zucchini, onion, pepper and salt. Let stand overnight
- Drain then rinse and drain again
- Add remaining ingredients
- Bring to a boil. Simmer 30 minutes
- Pour into hot sterilized jars (we are sterilizing jars in the diswasher) and seal tight
- Put jars into water and process for 5 minutes
- You have to wait about 6 weeks before eating/opening
