Taste of Tuesday - Date balls

Not only is this my favorite time of year, it's also the time for some yummy goodness! Of course, it may be best to set the scale back a few pounds :) Today I want to share a recipe my dad has been making for years. He used to make it for people that worked for him. So delicious but a tad bit sweet!






Ingredients:
  • 1 cup butter
  • 1 ½ cup sugar
  • 2 eggs
  • 2 Tbsp milk
  • 1 tsp salt
  • 4 cups Rice Krispies
  • 2 cups chopped dates
  • 1 cup chopped nuts
  • 1 tsp vanilla


Directions:
  1. Melt butter and sugar over low heat. Add dates; cook and stir until it boils. 
  2. Remove from heat. Add milk, salt and beaten eggs. 
  3. Stir; return to stove. Boil 2 minutes. Remove from heat; 
  4. add vanilla, cereal and nuts. Cool to lukewarm temperature. 
  5. Roll into balls, and roll the balls in coconut (my dad rolls them in powered sugar sometimes
