Taste of Tuesday - Roasted veggies

Like every kid in this world, I'm not the biggest fan of veggies. I'll eat them, sometimes even request them but they aren't on the top of my list. I only like a select few also. Carrots and broccoli are my favorites! I just find them bland but I guess that's how they are supposed to taste, right? I thought so until my mom started roasting them. Depending on what you use, you can put such a twist on them! I figured since it's Thanksgiving, it'd be nice to share some tips on roasting them! All of the photos/recipes come from Pinterest. There are many variations of ways to make each to suite your preference!


Zucchini and Carrot

Directions:

  1. Preheat oven to 220 C/425 F
  2. Cut your veg into 8-cm/3-inch sticks, making sure they are even in thickness.
  3. Line a baking tray with baking paper and a light layer of olive oil.
  4. SEASON – go with the usual salt&pepper and branch out to one or two of the following (Choose Your Own Adventure-style): paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage – really, whatever takes your fancy and suits your meal. Using premixed spice blends is a great option too – Italian, Mexican, Old Bay – you know, just not all at once. Lightly toss your vegetable batons with a tablespoon or so of olive oil (not too much) and the herbs and spices.
  5. Spread your seasoned veg over your lined tray and roast, tossing halfway through, for about 20 minutes or until golden and slightly browned at the edges.

Cauliflower 

Ingredients:
  • 1 medium head cauliflower (about 2-1/4 pounds), trimmed and cut into florets
  • 3 large cloves garlic, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
Directions:
  1. Heat oven to 450 degrees F. 
  2. Combine cauliflower and garlic in a large bowl. Drizzle with olive oil, lemon juice, salt and pepper. 
  3. Transfer, in a single layer, to a large rimmed baking sheet. 
  4. Roast at 450 degrees F for about 25 minutes, stirring once. 
  5. Sprinkle with cheese. Serve immediately Yield: 6 servings.


Sweet Potato 

Ingredients:
  • 3 Sweet potatoes, peeled and cut into bite size cubes
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1 tbsp of brown sugar (more if you want it sweeter)
  • 1 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • Pinch of ground ginger
  • Sea salt, to taste
Directions:
  1. Preheat the oven to 350 degrees. Coat a small baking dish with cooking spray
  2. Peel and dice the sweet potatoes into bite size cubes and place in the baking dish. 
  3. Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt.
  4. Add more sugar or cinnamon if desired. Toss to coat evenly.
  5. Bake in the oven for 60 minutes. Stir the sweet potatoes once or twice during roasting. Enjoy.

Clean Eating Seasoned Brussels Sprouts Recipe
Brussels Sprouts

Ingredients:
  • (30) Brussels Sprouts 
  • 1/4 C Olive Oil 
  • 2 Tablespoon Kosher Salt (I like a lot of salt. You can reduce this amount to suit your taste.)
Directions: 
  1. Preheat oven to 400 degrees. 
  2. Wash sprouts, remove outer leaves and place in a 19" x 11" roasting pan. 
  3. Drizzle sprouts with olive oil until lightly coated. Sprinkle with salt. 
  4. Place pan in preheated oven and roast for about 20 to 25 minutes turning occasionally. Remove from oven when outer leaves are golden brown.

Weekend Shenanigans

Happy Monday and "official" start to the holiday season! We had such a fun weekend! I went out of my comfort zone on Saturday but it was so worth it to be with family.


On Saturday a bunch of us went to the Bruins game in Boston. One of my cousins (who is 8) plays for a local kids team. For some reason they were given the chance to skate on the Bruins ice during the first two periods. They called it "3 minutes of fame." The kids play a little 3 minute game which was so fun to watch! My cousin made 2 of the 3 goals...future superstar! I'm not a sport fan so going to the game was a big deal for me. While I wouldn't go to another, it wasn't that bad. When you're sitting at a game in person it feels like the players go so much slower and the atmosphere is so much more relaxed than it seems on TV! I will say though, any fear of heights I didn't know I had, sure showed. Our seats weren't that bad but geez, when we first sat I felt like I was just going to tumble down. It got better though and the Bruins ended up winning!

After the game we went back to my cousins' house for food and to relax. 

a) one of my cousins. She was just the cutest lining up all the napkins. She's such a shy girl and barely talks but couldn't stop last night. She was showing us things and making us "bid" on a price. 
b) seriously the devil. We ate way too much food!


Yesterday was SO SO cold and windy. Not just a little windy but so much that wires and traffic lights came down. These two pictures were taken 12 hours apart. Not much change in temperature!



Because we went to the Bruins/my cousins we were gone for about 10 hours and didn't want to leave poor Bailey alone that long. So Brian's dad came and got him for the night. It's amazing how much you can miss an animals in just a day! He was so happy to be home



We aren't putting up our Christmas decorations until after the first week of December but I used my charm to make my dad up this up. It's always meant alot to me because it has my first dog part of it. Cinda was her name. I've mentioned her as being my grandparents dog. They promised me when they both went to heaven I would get her. We put her down in 2002.

Friday Five

So glad it's Friday! We have a fun weekend planned that I cant wait to share with you but for today, here are my five for the week!


[One]
Picked my classes for next semester. I'm going to stick with two like I have been all along. This current semester was a killer with three. I tell myself it shouldn't be a big deal since so many college students take 5 classes. It's not that I can't do it, I feel more rushed and like I can't get a handle on all the assignments. Plus I have class everyday but Fridays so I dont have much time to get things done during the Monday-Thursday span. I'm taking Social Psychology and Biology. Biology shall be interesting. Has anyone taken it and what did you think? This whole lab thing will be new since I've never done it. I also found out that after this Spring semester I only have 6 classes left before graduation. That would mean Spring 2015. I'm so excited!


[Two]
This little girl turns 2 today. It's amazing how fast time flies by! It gets heartbreaking sometimes since we can't be with them to experience all her "little" and fun moments. She and my sister in law are flying up Thanksgiving night. My sister in law has planned her birthday party to be up here! 



[Three]
I got to go out with a good friend from school! It was so nice because she lives an hour away so we only see each other when we both have a lunch break at school. The place we went to was so so good and they dressed it up so nice for Christmas! Christmas lights are my favorite! A peace sign and three stars!



[Four]
Wednesday I woke up dreading the day. Two classes and in both we were doing debates. I was extremely nervous about one of them. So, waking up to this email was seriously the nicest thing and made my day. I want to say thank you to all of you for reading my blog! I know I may not be the "coolest" blogger or write about all the "in:" things but as long as I can inspire you in some way, I'm proud!




[Five] 
One of the Facebook pages for our city announced Wednesday that there is a book about a string of murders that took place in our city. The name of the book is our cities name! It's about a former police officer from New Hampshire who comes to our city to help investigate the murders. We ordered one that came yesterday. I'm not one for mystery/murder type of books but this is an interesting twist so I'm looking forward to it!

Pinterest Inspired!

One week until Thanksgiving! I cant even believe it. We'll be going to my aunts for our turkey meal but I still wanted to find a few DIY things for around the house. Where better to search than Pinterest. I dont use Pinterest alot, because lets face it, I'm not that creative, so last night as I searched I realized I was getting sidetracked by everything else! I would like to drive too...

I haven't really talked about it much on the blog itself but one of the things I cant do due to the disability is drive.

I'll never forget the day I found out. Have you ever had a moment from a long time ago that you swear really  happened but then second guessed yourself? I can picture the day but, then again, I feel it was a dream that I just embellished to fit the time/place Anyway, the kids in one of my elementary school classes were asking about it. One of the special ed teachers was in the room at the time and simply said "no, she wont be able to" I was under 12 so, again, it seems like I'd be too young to really understand it.

It's something that started coming naturally to me as time passed but in my mind I had that thought of "I wont get to have freedom like everyone else." And, I'll admit to this day, if I have the itch to go somewhere, I get a tad bit discouraged when I can't. I rely on my parents and Brian, who have been wonderful. I don't make it a big deal to my parents but if I ask to go somewhere and Brian doesn't want to, I always say that if I could, I'd go myself." I feel bad sometimes because I may have a craving for some type of snack and only want to go to the store 2 minutes away, pointless, right? When it comes to school, I base the times and days I go around my mom and Brian, or at least try to. If I choose a morning class that runs into 1pm or later, both of them may be at work which would mean I'd have to wait for my dad at 5:30pm. I could take the bus, that's an option but I honestly get cheeped out by it. Anyone feel this way about public buses? I only really ask to go anywhere for that matter when I know we'll be out already. It's more convenient but also means I could be in the house for a few days in a room, especially in the summer.

Again, it's something I've become used to, the whole staying in the house for days in a row, but the independent part of me sometimes feels trapped and would love to experience driving. That's until I get into the car with someone and realize how crazy other drivers are....






Here are a few reasons I'm glad I don't drive:

People don't use their blinkers: This is probably the simplest part of driving. A little switch thing you flick. Most cars even shut their blinkers off automatically for goodness sake! The thought process of not using it while getting into another lane or turning baffles me. And then apparently it's your fault that you couldn't read their minds. It also gets me irritated when someone will merge into your lane and put their blinker on pretty much as they already crossed the line. 

When people are in a "hurry" and cant wait until you finish your turn: this happened ALOT while I lived with Brian. Let's say there was a stoplight on a main road. We wanted to turn right onto a side road and there were cards on the other side that wanted to turn left onto the same street. We turn right and before our car fully makes the turn, the car turning left starts to turn. I seriously hate that. Just wait 2 seconds...

Merging onto the highway from an exit: this one I will never understand...there's a yield sign people. I'm pretty sure you passed the grammar portion of every grade in elementary school which included the word yield. If no one is coming I can understand it but normally people just keep going and then get mad when you have to swerve to pass them. You are the one coming onto other peoples' territory (meaning the highway) so why not be respectful? It wont kill you to be for 2 seconds. Again, it's not going to get you anywhere any faster. It's even worse when you are merging onto a main road. One time while in junior high, me and the others in my neighborhood were on the bus going to school. We had to take another exit to get their which included having to put at the top of the exit because there was oncoming traffic. It was a bridge was it was even harder to get around. My bus driver stopped to yield and all of a sudden we felt a big bang. Some idiot in a very small car hit our big bus. What's the point?! 

When you get into an opposite lane to "get there faster: Brian is guilty of this and I tell him all the time. If we are on main road with two lanes on our side and Brian gets "annoyed" with the cars in front of him, you'll move to the other lane. Ok sure, whatever. The problem? We are supposed to be turning right in a matter of 1 or 2 minutes, which means he has to get back into the lane he was originally in. Sometimes that's difficult which makes him mad. I always tell him that I'd rather be a minute or two late or just deal with it for the time being than having to go turn around or something. So many people do it though and it's stupid. The ones who roam in and out of lanes so they can "get there faster" make me laugh. How about when someone is in the left lane and "realizes" their exit is almost right onto of them and has to cut everyone off in order to get to it. Pay attention!

When there is construction: When I used to live with Brian, we'd come to New Hampshire and bunch and would drive the hour back later at night, maybe around 10pm. Summer of 2009 they were doing paving on the highway that was the majority of our drive. I, like everyone, hate traffic in general, so when there's grid lock I get so antsy. The majority of the grid lock happens  because people cant just wait. All these people keep traveling in the lane that will be closed in 2 seconds and then have to force their way into the other lanes. Sometimes I want to give people the benefit of the doubt that they just don't realize the lane is closing because sometimes the sign isn't until the very last second but then I think why would they want to inconvenience themselves and others? Probably because they don't care and want to get ahead. We all have to wait so why don't you? What makes you so powerful?

When people just shove their way in: Where Brian lived, it was a big city. You usually had to go through downtown to get anywhere, the most direct route. I have never seen such a puzzle. Meaning that people come from all different streets onto the main road where there are already cars and just weave in and out. It's actually quite amazing, as long as I'm not part of it! 

Driving in general: I could probably find so many little things to complain about but I dunno, I just feel like the world would be so much nicer if people could just follow the rules. My dad and I watch "The Peoples Court" all the time and there are always so many accident cases. Of course, usually the person that doesn't win will complain. It's simple, follow the rules and there wont be any issue. If you can put on makeup or talk on the phone while driving, you can watch what you are doing.

Taste of Tuesday - Chicken soup in the slow cooker

Now that it's alot cooler one thing my parents love making is soups. Depending on our meal we have on Sundays, they may take the rest of the meat and turn it into soup and use the rest of Sunday to prepare so it's ready for the week! Unfortunately not everyone has the chance to spend a few hours at once making soup. Here's a slow cooker version for those that just want to turn it on and go! My only note with this recipe is that it calls for cream of mushroom soup. I'd assume you could just use cream of chicken soup though

Ingredients:
  • 1 store-bought roasted chicken 
  • 1 cup diced onions 
  • 1 cup diced celery 
  • 1 cup diced carrot 
  • 4 (14-ounce) cans low-sodium chicken broth 
  • 2 (10.75-ounce) cans condensed cream of mushroom soup with roasted garlic 
  • 2 teaspoon fines herbs* 
  • Salt and pepper 
  • 2 cups egg noodles, cooked 


Directions:
  1. Remove the skin from the chicken and shred the meat from the bone
  2. the chicken into a slow cooker along with the onions, celery, and carrots.
  3. in broth, mushroom soup, and fines herbs and season with salt and pepper
  4. Cover and cook on high setting for 3 to 4 hours or low for 8 to 9 hours. 
  5. When soup is finished, stir in egg noodles. Adjust seasonings and serve

Five on Friday - it's not really secret anymore!

Happy Friday Friends!! I apologize for being MIA this week a bit. I caught some sort of sickness that started Sunday and has stayed by my side. This week, though, waited for no one. Two tests on back to back days! Despite all of that, the week was good overall. Here are my five!




One.
I'd like to give a small rant for a minute. I understand completely that things can go wrong or that there are alot of orders to be filled at once but here's the thing...I placed the order online on October 25th. My order status said the packages should arrive between October 30th and Nov 4th. Ok great! About a week which is understandable. I waited anxiously that whole week. I come home on Halloween to find a package...but it wasn't mine. My dad had ordered something the night after I did and the package was for him. I was antsy at first because he got his first. Again I waited. Nov 4th came around, the latest it was to arrive. Nothing. Although it sounds crazy I'll admit in the back of my mind I semi thought maybe it had come and someone picked it up. Totally unlikely but still. I waited Tuesday and Wednesday, noting. By Thursday I decided to go onto the website to customer service. After a few clicks I realized I could click the tracking number and go to the Fedex website. It's there that I discovered the packages hadn't even been shipped until two days ago, which was Nov 5th. Needless to say I waited two weeks but finally it came!

Two:
New hairdo! So blonde. Now that my hair is growing, you can see the dark brown underneath where I dont have highlights. It's kind of cool!



Three:
So this probably isn't a big deal to anyone but my mom's side of the family tends to use birthdays as excuses. When the Red Sox were in the World Series my Uncle begged his Facebook friends for tickets because it was "his birthday." Or if someone wants to get spoiled or something they play the birthday card. We also celebrate half birthdays. On Wednesday my dad randomly texted me...



Four: 
Due to my sickness thing, my mom bought a bunch of stuff to "make me feel better." One legitimate thing was this. I was so excited. I haven't had it in ages! It's the little things :)

Taste of Tuesday - Spinach and Artichoke Dip

When it comes to my eating habits, Brian would probably sum it up with the word "weird". things have to be cooked a certain way, taste a certain way and so on. It's hard when you have to compensate with all of your other 5 senses working overtime. I always tell Brian that I taste things differently. Whether it be simply the texture or seasoning. For example, I dislike tomatoes. I've tried them but just cant do it. However, if said tomato is mixed into a taco dip, I can do it. That is weird right?! Let's get to today's point, although I really could talk about my eating habits all day. Today's recipe focuses on another food I truly dislike except when it's in the below meal. Spinach! I've smelt it and have looked it over but wont touch it. When I was first introduced to this appetizer at a restaurant, I wasn't too sure. The combination didn't sound pleasing...and then I tried it! I could eat it all day. Back in 2011 my dad and I would get To-Go orders of this and bags of chips the restaurant gives for dinner all the time. It's just way too good!



Cheesy Spinach and Artichoke Dip Recipe



Ingredients:
  • 1 can (14 oz.) artichoke hearts, drained, finely chopped 
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained 
  • 3/4 cup KRAFT Grated Parmesan Cheese 
  • 3/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise 
  • 1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese 
  • 1/2 tsp. Garlic powder


Directions:
  1. HEAT oven to 350°F.
  2. MIX ingredients; spoon into 9-inch quiche dish or pie plate.
  3. BAKE 20 min. or until heated through.
  4. SERVE with crackers or chips


So simple isn't it?! It says as a tip in the recipe that buy using the light mayo and the two different cheeses the recipe becomes a little healthier which is a plus! Enjoy

Weekend Recap

What a crazy weekend we had! I'll admit, it's kind of nice sitting here knowing I don't have to get ready for school. Here are some weekend highlights!


On Friday Brian and I went out for some Frozen Yogurt. They just opened a place down the street and my was it tasty! It's awesome that froyo places are being opened everywhere these days! They sent a coupon in the mail and by using it, we paid a combine total of $.13.



As we left, the sky was looking so funky! It takes about 10 minutes to get home from this location and by the time we pulled into the driveway, it had started sleeting!! Crazy New England weather

And speaking of weather...something doesn't look like the others in the below picture. I'm not sure it's going to fully hit here, but bring it on!



Saturday my aunt and uncle hosted a party for my cousin's 16th birthday. It's always so nice to get together with part of our family. By the end of the night we were laughing hysterically. My aunt, uncle and two cousins just moved to this house two months ago. We helped them move but haven't seen the house with furniture and such yet. They did such a great job! At their old house they had their TV mounted to the wall but decided to buy a stand and I'm in love with it. The fireplace is built into the stand which is so neat!



Yesterday was cold and cloudy so we tore my room apart in the morning to vacuum. It's amazing how much dust can gather! My mom and I braved the cold to take Bailey for a walk later on. He was shaking so bad he was cold yet insisted on smelling every inch. We then went to Bed Bath and Beyond and Lowes. Not only are craft stores tempting but Bed Bath and Beyond always has such fun gadgets! Both stores also had Christmas stuff. I was in heaven!

Lastly, I'd like to thank those who thought about my aunt last week! She went to rehab a week ago yesterday. She was fine last Tuesday when my mom saw her. My dad, Brian and I went Friday and she was SO confused. Luckily she was hilarious (probably because of the meds) but it was sad to see how confused she was. She kept telling my dad she was so scared because she didn't know what was happening. We had to keep telling her she was in rehab. She didn't even known she had fallen. It was about 7:30pm and she asked every few minutes "why it was so dark out so early." She thought it was morning. It was amazing to see how down she had gotten. She was put on an IV because of extreme lack of fluids. She hadn't eaten a thing all day either. We haven't gone back but hope the fluids will get her on track.
